Another Pinterest find comin’ at cha….
As soon as I saw this pin I knew I had to try them, a healthy great alternative to the overly sugared breakfast foods.
What you’ll need:
1 box of cake mix
1 can pumpkin
Anything you want to use for toppings; chocolate chips, nuts, ect…
What you’ll do:
~Mix cake mix (only mix, do not use the other ingredients, {water, oil, eggs}) and pumpkin well.
~Place in sprayed muffin pan*, add toppings on top
~Bake according to cake mix directions
Enjoy…
*DO NOT use liners the muffin will stick to them…no good!
These got rave reviews and were an excellent treat.
I used vanilla and chocolate for my 4 dozen that I made. Use any kind of mix you’d like, add some cinnamon, nutmeg, ect. to enhance flavors, knock yourself out with variations. You can also go gluten-free on the cake mix, assuming that pumpkin mix is gluten free too(??)
Keep not that these will not bake up high like a typical muffin, the vanilla didn’t rise at all, the chocolate did a bit, so don’t overfill the pan.
