They are great cookies, although I think I will improve upon them next time. They were a smidge on the crunchy side so my liking, I love the soft chewy cookies…
Here’s what you’ll need:
3/4 cup unsalted butter, softened
1/3 cup butter-flavored shortening
1 cup granulated sugar
2/3 cup firmly packed dark brown sugar
2 large eggs
2 tsp vanilla extract
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
1 tbsp espresso powder
1 bag toffee bits
2 cups semi-sweet chocolate chips
What you’ll do:
~ Beat butter and shortening at medium speed with an electric mixer until creamy; gradually add sugars, beating until light and fluffy,.
~Add eggs, beating until blended
~Combine flour, cocoa, baking soda, salt and espresso powder; gradually add to butter/sugar mixture, beating until blended. Stir in toffee bits, and chocolate chips.
~Chill dough for 30 minutes at least
~Drop dough by the tablespoon fulls, 2″ apart onto a parchment lined baking sheet
~Bake at 350 for 10-12 minutes, or until barely set. Cook on sheet for 10 minutes then transfer to a wire rack to cool completely.
